PUMPKIN MAGIC AND MORE!

CABBAGE & BEETROOT SANDWICH

This makes a delicious sandwich that is refreshingly different from your average lunch. SERVES 2 Preparation time: 20 minutes

■ 500g/17½oz raw beetroot
■ 250g/9oz cabbage
■ 2-3 spring onions, finely chopped
■ 50g/2oz raisins
■ 150g/5oz low-fat yoghurt
■ 1 tsp clear honey
■ 1-2 tsp wholegrain mustard
■ ½ lemon, juice of
■ Salt and pepper
■ 4 thick slices of wholegrain bread
■ Butter

1. Peel and grate the beetroot, and finely shred the cabbage.

2. Tip into a large bowl and stir in the spring onions and raisins. Mix in the yoghurt, honey, lemon juice and mustard. Season with plenty of salt and pepper. Set aside.

3. Butter the bread, and assemble the sandwiches.

4. Serve.
