MEDITERRANEAN CHICKEN CALZONES
Calzones can also be cooked on a baking sheet instead of a baking stone.
Makes 4 servings (4 calzones) Total time: 30 minutes
HEAT:
3 Tbsp. olive oil, divided
1/4 cup each chopped red onion and sun-dried tomatoes
STIR IN:
1 tsp. dried Italian seasoning
1 tsp. minced fresh garlic
1 cup chopped cooked chicken
1/4 cup chopped jarred roasted red peppers
Salt to taste
ROLL:
1 pkg. purchased pizza dough (13.8 oz.), such as Pillsbury
SPREAD:
1 cup purchased refrigerated pesto (such1 cup shredded part-skim mozzarella1/4 cup chopped fresh basil
