6 chicken thighs
Himalayan salt and black pepper
2 tbsp coconut oil
2 shallots, finely chopped
50g bacon, chopped
2 tbsp tarragon vinegar
1 cup home-made chicken stock
2 bay leaves

1 tbsp ghee250g cauli rice30g almond flakes, toasted100g fine beans, cooked60g home-made basil pesto
