It’s never easy trying to figure out what to cook for dinner. But your dilemma is solved with these tried-and-true dishes, which are all big hits in Nadia’s own family, including 2-year-old Bodhi (and once he’s got his seat at the table, little baby bro River). These are perfect meals for the whole whanau. Enjoy!

CHICKEN KATSU

Chicken katsu with corn & bok choy brown rice salad

Ready in 55 minutes | Serves 4 | DF

This has been a long-standing favourite meal in My Food Bag’s Family and Classic Bags. What kid doesn’t like crumbed chicken?!

600g boneless, skinless chicken breasts
¼ cup flour
½ tsp salt
2 eggs
1½ cups panko breadcrumbs
2 Tbsp oil

BROWN RICE SALAD

1 cup brown rice
2 corn cobs, husks and silks removed
2-3 baby bok choy, bottom 3cm trimmed off, washed well, thinly sliced
1 red, yellow or orange capsicum, cored, sliced
1/3 cup chopped roasted peanuts
¼ cup chopped coriander,
