    This dreamy cake is gloriously fluffy and perfect for special occasions or afternoon tea.

    Serves 12 m Ready in 1 hour 10 minutes, plus cooling

    for the cake:

    150g plain flour
    100g icing sugar, plus extra to dust
    8 egg whites pinch of cream of tartar
    250g castor sugar
    ½tsp vanilla extract
