LEMON CHICKEN AND TENDER-STEM BROCCOLI SALAD

Tender marinated chicken with healthy greens and a crunchy almond topping makes a tasty summer meal. It can be served warm or chilled.

Serves: 4

Preparation time: 30 minutes, plus marinating time

Cooking time: about 10 minutes

♥ 4 chicken breast fillets
♥ 2 candy-striped beetroot, peeled
♥ juice of 2 lemons
♥ 100ml olive oil, plus extra for drizzling
♥ grated zest of 1 lemon
♥ 2 cloves garlic, crushed
♥ 400g tender-stem broccoli, steamed
♥ 2 stalks celery, thinly sliced
♥ 1 pack of watercress or rocket
♥ 1 pack baby salad leaves
♥ 100ml toasted almonds, chopped
♥ 100ml chopped dried cranberries

1 Place the breasts between two pieces of baking paper or plastic wrap and pound them gently with a rolling pin until they are very thin.
