Die lekker van die brood is die beslag wat jy bo-oor die deeg smeer voor jy dit in die oond sit. Dit bak baie donker en gee ekstra smaak aan die brood.

GISMENGSEL – 24 UUR VOOR BAK
70 g (125 ml) koekmeel
125 ml water
1 x 10 g-sakkie kitsgis
Meng alles en laat oornag in yskas fermenteer (minstens 8 uur).
BROOD
600 g (1 070 ml) koekmeel
120 g (210 ml) rogmeel
120 g (210 ml) volkoringmeel
1 x 10 g-sakkie kitsgis
10 g sout
440 ml donker bier
160 ml louwarm water
100 ml mielieblom ( maizena )
60 ml heuning
80 ml water
