Spicy Kumara Enchiladas with Avocado Lime Crema

PREP + COOK TIME 50 MINUTES SERVES 4

 2 medium kumara, scrubbed and chopped into 1cm pieces
 cooking oil spray
 2 teaspoons olive oil
 1 onion, chopped
 1 stick celery, chopped
 3 cloves garlic, minced
 1 teaspoon chilli
 1 teaspoon cumin
 1 teaspoon dried oregano
 ¼ teaspoon salt
 500ml canned tomato sauce
 ½ cup water
 1 tablespoon soy sauce
 400g canned kidney beans, rinsed, drained
 400g canned black beans, rinsed, drained
 8 tortillas
 1 cup grated cheese

AVOCADO LIME CREMA

 ¼ cup natural yoghurt
 ½ ripe avocado
 juice of 1 lime
 ¼ cup fresh
