Spicy Kumara Enchiladas with Avocado Lime Crema
PREP + COOK TIME 50 MINUTES SERVES 4
• 2 medium kumara, scrubbed and chopped into 1cm pieces
• cooking oil spray
• 2 teaspoons olive oil
• 1 onion, chopped
• 1 stick celery, chopped
• 3 cloves garlic, minced
• 1 teaspoon chilli
• 1 teaspoon cumin
• 1 teaspoon dried oregano
• ¼ teaspoon salt
• 500ml canned tomato sauce
• ½ cup water
• 1 tablespoon soy sauce
• 400g canned kidney beans, rinsed, drained
• 400g canned black beans, rinsed, drained
• 8 tortillas
• 1 cup grated cheese
AVOCADO LIME CREMA
• ¼ cup natural yoghurt
• ½ ripe avocado
• juice of 1 lime
• ¼ cup fresh
