ASIAN GREENS WITH VERMICELLI

Serves 2 EASY GREAT VALUE Preparation: 5 minutes Cooking: 10 minutes

sugar snap peas, mangetout and
asparagus (or any other greens) 200 g
radishes 4, sliced
baby cucumbers 4, sliced
fresh ginger 1 t crushed
rice wine vinegar 4 T
vermicelli noodles, cooked, for serving
pickled ginger, for serving
wasabi, for serving
Woolworths crispy onion sprinkle, for serving

Blanch the greens, then drain. Toss the radishes and baby cucumbers with the ginger and rice Serve with the noodles, pickled ginger, wasabi and crispy onions.
