1 cup basmati rice
400ml water, plus 150ml boiling water
15g dried porcini mushrooms
1 Tbsp vegetable oil
6 flat mushrooms, sliced
1 onion, thinly sliced
2 cloves garlic, crushed
1 Tbsp sweet smoked paprika
1 Tbsp tomato paste
200ml light sour cream
Sea-salt flakes and freshly ground black pepper, to season
Chopped flat-leaf parsley, to serve

Combine rice, water and a pinch of salt in a small saucepan over high heat. Bring to the boil
