Spatchcock chicken

Serves 6 Preparation time 30 minutes Cooking time 35 – 40 minutes

You need

 1 large chicken (1,6 kg)
 100 g butter
 5 big cloves of garlic, sliced
 2 red chillies, chopped
 1 sprig of rosemary, needles stripped and chopped
 juice and grated peel of 1 lemon
 1 tablespoon smoked paprika
 1 teaspoon coarse sea salt
 ½ teaspoon freshly ground black pepper
 2 tablespoons olive oil
