Dinner in 5 ! Five super-quick veggie dinner recipes

GRATED VEG + HALLOUMI QUESADILLAS

Serves 4

• 1 small zucchini
• 2 carrots
• 1 capsicum
• 1 halloumi or grated cheese of choice
• 2 eggs
• 4-6 tortilla breads
• a small handful herbs of your choice
• 1/2 lemon or lime
• salt and pepper

1. Grate zucchini, carrots and halloumi coarsely and chop the bell pepper finely (along with any other leftover cheese stump or veg you have in the fridge). Squeeze out excess liquid from the zucchini and add it to a bowl along with the cheese and vegetables.

2. Whisk two eggs and add to the bowl (for vegan, you can use vegan cheese and mash beans instead of egg).

3. Add any finely chopped herbs of choice (I love dill and mint–our kids love ZERO herbs!) and a squeeze of lime or lemon and give it a good toss.
