7-Day Sweet Pickle Chips Recipe

This recipe has been around forever in the Mennonite community. Here, I’m encouraging you to make 10 pounds of pickles. If you don’t believe me, halve the recipe. Mark my words, you’ll make these pickles again before long. Use nonchlorinated water. Chill the pickles thoroughly before serving. Yield: 12 pint jars.

• 10 pounds fresh• ¼ cup kosher or pickling salt• 3 tablespoons alum, or 5 tablespoons loose black tea from 8 tea bags• 4 quarts apple cider vinegar• 10 cups granulated sugar, divided, plus 1 cup if needed• ¼ cup pickling spice
