ROAST PORK BELLY SERVES 4 PREPARATION: 15 MIN COOKING: ABOUT 2 HOURS

2kg pork belly
30ml (2T) sea salt flakes
15ml (1T) freshly ground pepper
200ml soy sauce
200ml cold water
50g brown sugar
2 star anise
2 cinnamon quills, broken up
3cm fresh ginger, peeled and thinly sliced
4 garlic cloves, peeled and crushed
1 spring onion, sliced

Preheat the oven to 240°C.

1 Score the pork rind at 1cm intervals. Place the pork in a deep, heavy-based roasting pan.

2 Rub half of the salt and pepper into the rind.

Sprinkle the remaining salt over the pork. Roast for 20-30 minutes or until the skin has crackled.

Remove the pork from the oven and the pan. Then add the soy sauce, cold water, brown sugar, star anise, cinnamon, ginger, garlic
