    Cheat’s hack

    For a quick and easy time-saving option, use 2 x 125g packets of White Wings Pavlova Magic and follow the simple directions.

    Cupcakes can be made up to 8 hours ahead; add buttercream and store in an airtight container in the fridge. Remove 30 minutes before serving; add gingerbread men.

    Pavlova slab with candied watermelon and strawberries

     SERVES 12 PREP AND COOK TIME 2 HOURS

    1 tablespoon cornflour
    8 egg whites
    1 teaspoon cream of tartar
    2 cups (440g) caster sugar
    1 teaspoon vanilla extract
    2 teaspoons white vinegar
    1½ tablespoons cornflour, extra
    250g strawberries
    500g piece watermelon
    ¼ cup (55g) caster sugar, extra
    ¼ cup (60ml) water
    2 tablespoons fresh lime juice
    2 tablespoons slivered pistachios

    LIME CREAM

    300ml thickened cream
    250g crème fraîche
    1 tablespoon icing sugar
    2 teaspoons finely grated lime rind

    Choc mint ice-cream bomb

    SERVES 10 PREP AND COOK TIME 1 HOUR (+ FREEZING TIME)
