SANTA JACKET MUD CAKE

SERVES 12 PREP 25 MINS

250g unsalted butter, softened
3 cups CSR Soft Icing Sugar Mixture, sifted
red gel food colouring
2 x 600g store-bought mud cakes
2 x 100g blocks dark chocolate (see tip)
1 x jam-filled biscuit
½ cup mini white marshmallows

1 In a bowl of a stand mixer, beat butter until pale and fluffy. Gradually add icing sugar, beating until light and fluffy. Tint buttercream icing with red gel food colouring.

2 Place one mud cake on a board, top with icing and level. Top with remaining cake and repeat with icing, then cover entire cake with icing, reserving
