Bourbon & cola pork ribs

PREP + COOK TIME 2 HOURS (+ REFRIGERATION) SERVES 4

You will need to start this recipe a day ahead.

1 cup (250ml) bourbon whiskey 3 cups (750ml) cola
1 cup (250ml) tomato sauce
2 tsp Mexican chilli powder
1/3 cup (95g) smoky barbecue sauce
2kg American-style pork ribs (see tip)

1 Combine the bourbon, cola, tomato sauce, chilli powder and barbecue sauce in a large shallow bowl or ovenproof dish. Add the ribs, turning to coat in the marinade. Cover with cling film. Refrigerate overnight.

Preheat a covered barbecue with all burners on low and the hood closed until temperature reaches 180°C (or follow the manufacturer’s instructions). Drain ribs, reserving the marinade. Transfer ribs to two oiledPlace the remaining reserved marinade in a large saucepan and bring to the boil. Boil for 20 minutes or until the marinade reduces to about 1½ cups.
