PEAR AND GRAPE SALAD

Serves 6
4 cups thinly sliced stemmed kale
2 cups thinly shaved Brussels sprouts
3 red and green anjou pears, halved, cored and sliced
1 orange, peeled and sliced
1 cup cumquats, halved
1 cup red seedless grapes, halved
½ cup olive oil
⅓ cup Prosecco or dry white wine
¼ cup white wine vinegar
2 Tbsp finely chopped shallots
1 Tbsp chopped fresh chives
2 tsp Dijon mustard
¼ tsp sea-salt flakes
¼ tsp freshly ground black pepper
STEP 1 Mix kale and Brussels sprouts in a serving bowl. Arrange pear, orange, cumquat and grape over the top. STEP 2 Put oil, Prosecco, vinegar, shallots, chives, mustard, salt and pepper in a screw-top jar and shake well. Drizzle over salad. Serve.
