SERVES 4

INGREDIENTS

6 bone-in chicken thighs
1 tsp salt
½ tsp cumin
¼ tsp pepper
2 tbsp vegetable oil
½ cup frozen peas

FOR THE RICE

1 onion, diced
1 red bell pepper, seeded and diced
4 garlic cloves, minced
2 cups long-grain rice
2 cups chicken stock
400g can diced tomatoes
2 tsp cumin
1 tsp annatto powder
