3 zucchini
2 medium red onions
3 cloves garlic, sliced
1/3 cup olive oil
12 chicken tenderloins, trimmed
250g punnet cherry tomatoes
½ cup drained pitted Sicilian olives
2/3 cup finely grated parmesan
60g bag baby rocket leaves
½ cup fresh basil leaves
2 tblsps balsamic vinegar
Cut capsicums lengthways into 2m wide strips.
