The term ‘mixed game’ can mean a lot of things and some people can be a bit mistrusting of it, as they think it is a licence to put anything in the mix.
Whenever I use mixed game as dice for a stew or as meat to be minced, I look to the tough cuts that have more flavour and take longer to cook. We call these the second-class cuts.
