Slow-roast lamb breast with oregano and feta

onions 2, 1 chopped, 1 sliced
garlic 3 cloves, crushed
black olives50g, pitted and finely chopped100ga small bunch, leaves picked and chopped (keep the stalks), plus a handful for the orzo100g, crumbled, plus 50g more for the orzo1, zested and ½ juiced1.5kg
