Handmade Hand Pies

Chocolate-Coconut Hand Pies

MAKES 8

Coconut fans, rejoice! These glazed chocolaty, coconutty goodies are a delight.

1 cup whole milk
¼ cup granulated sugar
2 large egg yolks
2 tablespoons cornstarch
2 tablespoons unsweetened cocoa powder
½ teaspoon kosher salt
2 tablespoons unsalted butter
½ cup sweetened flaked coconut
1 teaspoon vanilla extract
½ teaspoon coconut extract
1 (14.1-ounce) package refrigerated piecrusts
1 large egg
1 tablespoon water
½ cup confectioners’ sugar
2½ to 3 tablespoons heavy whipping cream

1. In a medium saucepan, heat milk over medium-high heat, whisking occasionally, until steaming (do not boil). Remove from heat.

In a medium bowl, whisk together granulated sugar, egg yolks, cornstarch, cocoa, and salt. Gradually add ½ cup hot milk to egg mixture, whisking constantly. Return mixture to saucepan, whisking to combine. Cook over medium heat, whisking constantly, until boiling. Let cook for 1 to 2 minutes to remove cornstarch flavor. Remove from heat; whisk in
