150 g frozen blackberries
3 whole star anise
60 ml (4 tbsp) erythritol
80 ml (⅓ cup) water
500 ml (2 cups) crushed ice
750 ml (3 cups) rosé wine, chilled
handful of mint sprigs, to serve
fresh blackberries, to serve
1. Place the blackberries, star anise, erythritol and water in a small saucepan over medium heat. Bring to a simmer. Cook, stirring occasionally, for 5 minutes. Set aside to cool completely, then transfer to a bowl.
Place in the fridge for 1 hour or until chilled.
