SANGRIA POACHED APPLES

PREP 10 MINS COOK 20 MINS SERVES 4 (AS A DESSERT)

125ml (½ cup) dry red wine
60ml (¼ cup) water
1 cinnamon stick
½ vanilla bean, halved lengthways, seeds scraped
3 tsp honey
5cm strip orange zest
1 (150g) red apple, unpeeled, cut into 5mm-thick slices
1 (150g) green apple, unpeeled, cut into 5mm-thick slices
130g (½ cup) low-fat Greek-style natural yoghurt

1 Put the wine, water, cinnamon, vanilla bean and seeds, honey and zest in a small saucepan. Bring to the boil over high heat. Add the apple slices and reduce heat to medium-low. Cook, covered, stirring occasionally, for 5 minutes or until just tender. Use a slotted spoon to transfer apples to a bowl.

Return the syrup to a simmer over medium heat. Simmer, uncovered,
