APPLE, PEAR, AND CRANBERRY PIE
Makes 1 (9-inch) deep-dish pie
4 cups thinly sliced Granny Smith apples
3 cups thinly sliced d’Anjou pears
1 cup dried cranberries
2 tablespoons fresh lemon juice
⅔ cup firmly packed light brown sugar
¼ cup plus 1 tablespoon granulated sugar, divided
¼ cup cornstarch
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon salt
Double Piecrust (recipe follows)
1 tablespoon whole milk
1. Preheat oven to 350°.
2. In a large bowl, gently toss together apples, pears, cranberries, and lemon juice.
3. In a medium bowl, stir together brown sugar, ¼ cup granulated sugar, cornstarch, cinnamon, nutmeg, and salt. Add sugar mixture to fruit mixture, gently tossing to coat.
