STICKY TAMARIND BEEF STEW

Possibly the easiest stew to put together, but you’d never guess from the flavour.

SERVES 4

1tbsp oil
1.5kg (3lb) beef chuck, cut into 3cm (1¼in) cubes
3 onions, chopped
1tbsp grated fresh ginger
2 garlic cloves, sliced
1 green chilli, sliced, plus extra to serve
450ml (15fl oz) beef stock
2tbsp light soy sauce
45g (1½oz) brown sugar
2½tbsp tamarind paste
200g (7oz) sugar snaps and mangetout
100g (3½oz) baby leaf spinach
