STICKY TAMARIND BEEF STEW
Possibly the easiest stew to put together, but you’d never guess from the flavour.
SERVES 4
✣ 1tbsp oil
✣ 1.5kg (3lb) beef chuck, cut into 3cm (1¼in) cubes
✣ 3 onions, chopped
✣ 1tbsp grated fresh ginger
✣ 2 garlic cloves, sliced
✣ 1 green chilli, sliced, plus extra to serve
✣ 450ml (15fl oz) beef stock
✣ 2tbsp light soy sauce
✣ 45g (1½oz) brown sugar
✣ 2½tbsp tamarind paste
✣ 200g (7oz) sugar snaps and mangetout
✣ 100g (3½oz) baby leaf spinach
✣ Handful of coriander✣ ✣
