HONEY MADELEINES WITH WHITE CHOCOLATE FLOWER GLAZE

These little cakes are perfect for little hands. They are delicious on their own but even better with the white chocolate glaze and flowers. Lavender, geraniums, pansies and calendula petals have been used here.
Makes around 24 madeleines
• 185g / 6.5oz unsalted butter at room temperature
• 40g / 1.4oz runny honey
• 4 eggs
• 130g / 4.6oz sugar
• 1 tsp vanilla extract
• 185g / 6.5oz flour
• pinch of salt
• 2 tsp baking powder
• 150g / 5.3oz white chocolate, chopped
1. Melt the butter in a saucepan and keep heating until it is browned and smells nutty. Stir in the honey and set aside.
2. Put the eggs into the bowl of a stand mixer or in a mixing bowl. Beat together with the sugar and the vanilla for around 5 minutes until pale and thick.
3. Sift the flour, salt and baking powder together in a bowl.
4. Beat the butter into the egg mix at a slow speed.
5. Fold in the flour
