TOFU HONEY NOODLES

SERVES 4 PREP 10 MINS COOK 10 MINS

2 bunches broccolini, cut in half
250g snow peas, sliced thickly
270g dried udon noodles
2 x 200g packet honey soy tofu, cut into 3cm pieces
2 tbsp white sesame seeds, toasted

1 In a large frying pan over high heat, add 2 tbsp olive oil. Cook broccolini pieces 2 mins or until slightly charred. Set aside and repeat with snow peas.

Bring a large pot of water to the boil. Cook noodles 2-3 mins
