Makes 48

¾ cup unsalted butter, softened
1¼ cups granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 (10-ounce) package chopped pitted dates
¾ cup firmly packed light brown sugar
¾ cup chopped walnuts
½ cup water

1. In a large bowl, beat butter and granulated sugar with a mixer at medium speed until fluffy, 3 to 4 minutes, stopping to scrape sides of bowl. Add egg and vanilla, beating until combined.

2. In a medium bowl, whisk together flour, baking soda, and salt. With mixer on low speed, gradually add flour mixture to butter mixture, beating until combined. Cover and refrigerate dough for 1 hour.
