3 roe venison flanks (you need less if using a larger species). Cut in half lengthways and roll into cigar shapes and secure with cocktail sticks7 onions, 1 chopped and6 halved1 large carrot, chopped½ leek,chopped2 celery sticks,chopped3oz butter12oz tomatoes roughly choppedSalt and pepper1 bottle red wine1 pint beef or venison stock1 tin beef consommé
