EASY CIABATTA
Ciabatta is delicious as part of a cheese and charcuterie platter. Mix the dough in an electric mixer or do it by hand using a wooden spoon.
MAKES 2 LOAVES RISING: 3-4 HOURS BAKING: 20-30 MINUTES
FLOUR MIXTURE
500g stone-ground white bread flour
5ml (1t) salt
1 sachet (10g) instant yeast
a pinch of salt
TO BAKE
500ml (2c) lukewarm water
TO SERVE
various cold meat cuts and cheeses, olive oil, balsamic vinegar, fresh fruit, olives, nastergal jam or fruit preserves
1 Flour mixture Add all the dry ingredients to a mixing bowl and mix well.
2 To bake Put the flour mixture in the bowl of an electric mixer, using the K-hook. Add the water and keep mixing for 10 minutes until a fairly runny dough forms. Alternatively, beat for 10 minutes by hand using a wooden spoon. Cover and leave to rest for 4 hours.
