Or you’ll catch me daydreaming about dumplings past: the lacy-edged yaki gyoza I devoured in the drizzly Japanese countryside and the rich tortellini I spooned up at Osteria Francescana, chef Massimo Bottura’s legendary restaurant in Modena, Italy.
