Easy Baked Turmeric Rice

Baked rice doesn’t need to be boring. You can colour up this beautiful side with extra flavour and additional health benefits.

Serves: 3

1¾ cups chicken stock
1 tbsp olive oil
1 cup jasmine rice 2 tbsp salted butter
½ tsp turmeric

Preheat the oven to 190ºC.

Place the chicken stock in a saucepan and bring to the boil. Meanwhile, coat an ovenproof casserole pan with oil.

Place the rice and butter in the casserole pan, sprinkle over the turmeric and carefully pour the stock over. Cover and bake for 25 mins.

Remove from the oven, let stand for a couple of minutes, then fluff with a fork to serve.

Baked Coconut Rice Pudding

Allow this new take on an old-fashioned pudding to whisper sweet nothings in your ear. You won’t be disappointed with the flavour and satisfaction.

Serves: 2–3

2 tbsp butter or vegan spread
¾ cup basmati rice
3 tbsp coconut sugar
½ tsp vanilla Pinch cinnamon
3½ cups coconut milk
Fresh berries, to serve (optional)

Preheat the oven to 180ºC.

Lightly grease an ovenproof dish with butter or vegan spread.

Place the rice, coconut sugar, vanilla and cinnamon into the dish, pour coconut milk over the top and stir gently to mix.

Place in the oven for 1 hour and 15 mins,
