Fruit cocktail marzipan muffins
MAKES 12
325g (11oz) plain flour
2 tsp baking powder
½ tsp bicarbonate of soda a pinch of salt
150g (5½oz) caster sugar
150ml (5fl oz) plain yoghurt
150ml (5fl oz) milk
2 medium free-range eggs
100ml (3½fl oz) vegetable oil
1 tsp vanilla extract
1 can (415g) Del Monte® Fruit Cocktail in Juice, drained
150g (5¾oz) marzipan, cut into small cubes demerara sugar, for sprinkling
1 Preheat the oven to 190°C/Gas Mark 5. Line a 12-hole muffin tin with muffin cases.
Add the flour, baking powder, bicarbonate of soda, salt and sugar to a large mixing bowl
