Burritos
MAKES 4 PREP 20 mins COOK 25 mins EASY V
vegetable oil, for frying
1 red onion, chopped
3 garlic cloves, crushed
2 spring onions, chopped
1 x 400g can black beans, drained
1 tsp all-purpose seasoning
1 tsp cumin
2 pouches cooked plain or brown rice (500g)
2 ripe plantain, cut at an angle into 1cm-thick slices
1 Little Gem lettuce, cut into quarters
4 soft tortillas
1 Heat 1 tbsp of oil in a large frying pan over a medium-high heat and cook the red onion for 5 mins. Add the garlic and spring onions, and cook for 2-3 mins. Mix in the black beans, ½ tsp each of salt and pepper, the all-purpose seasoning and cumin. Cook for 5 mins, then remove from the heat, mix with the rice and set aside.
Heat 1 tbsp of vegetable oil
