Shrimp & Grits Hits

PICKLED SHRIMP WITH GRITS CRACKERS

Makes 6 to 8 servings

Tangy shrimp and veggies served with homemade crackers that are equally inspired by cheese straws and Cheez-Its are the spring snack you never knew you wanted but you won’t be able to get enough of.

1 lemon, quartered
¼ cup Old Bay seasoning
2 pounds unpeeled large fresh shrimp
1½ cups white wine vinegar
½ cup olive oil
1 tablespoon sugar
1 tablespoon celery seed
2 teaspoons kosher salt
2 small red chiles, thinly sliced
1 yellow onion, thinly sliced
1 lemon, thinly sliced
3 bay leaves
¼ cup capers, drained
2 tablespoons chopped fresh dill
1 clove garlic, thinly sliced
