Carrot soup

Serve this delicious soup with a wholemeal bun to make it a more satisfying meal while still low-cal.

SERVES 4 PREP 10 MINS COOK 30 MINS

1 large onion, chopped
500g carrots, chopped
1.25ltrs vegetable stock
100g low-fat soft cheese, plus extra for topping
Seeds (optional)

Put the onion and carrots into a large saucepan with the stock.
