GREEK ROAST LAMB WITH SKORDALIA AND POTATOES

2 cloves garlic, crushed
125ml (½c) lemon juice
30ml (2T) olive oil
15ml (1T) fresh oregano leaves
5ml (1t) fresh lemon thyme leaves
5 large potatoes (1,5kg), cut into 3cm cubes or chips
15ml (1T) finely grated lemon rind
30ml (2T) lemon juice, plus extra
30ml (2T) olive oil, plus extra

1 medium potato (200g), quartered
3 cloves garlic, crushed
15ml (1T) lemon juice
15ml (1T) white wine vinegar
30ml (2T) water
80ml (¹/3c) olive oil
