GREEK ROAST LAMB WITH SKORDALIA AND POTATOES
SERVES 4 PREPARATION + COOKING: 5 HOURS REFRIGERATE: 3 HOURS OR OVERNIGHT
2kg leg of lamb
2 cloves garlic, crushed
125ml (½c) lemon juice
30ml (2T) olive oil
15ml (1T) fresh oregano leaves
5ml (1t) fresh lemon thyme leaves
5 large potatoes (1,5kg), cut into 3cm cubes or chips
