    INGREDIENTS

    30g mixed dried mushrooms100g butter1⁄3 cup extra virgin olive oil1kg button mushrooms, sliced2 leeks, white part only, sliced4 cloves garlic, crushed2 Tbsp plain flour¼ cup tomato paste½ cup1 cup vegetable stock2 Tbsp thyme leaves, plus 6 extra sprigs2 Tbsp Worcestershire sauce400g can fava beans, drained, rinsed100g Swiss brown mushrooms, trimmedOlive oil spray
