APRICOT ROULADE
Our light as a feather sponge is kept moist with the addition of ground almonds. Tinned apricots mean this can be enjoyed year round.
SERVES 8
For the cake:
✣25g (1oz) flaked almonds
✣3 eggs
✣100g (3½oz) caster sugar
✣1tsp vanilla extract
✣55g (1¾oz) plain flour
✣55g (1¾oz) ground almonds
✣ ½tsp baking powder
For the filling:
✣200ml (7oz) whipping cream, whipped to soft peaks
