Something SWEET

APRICOT ROULADE

Our light as a feather sponge is kept moist with the addition of ground almonds. Tinned apricots mean this can be enjoyed year round.

SERVES 8

For the cake:

25g (1oz) flaked almonds
3 eggs
100g (3½oz) caster sugar
1tsp vanilla extract
55g (1¾oz) plain flour
55g (1¾oz) ground almonds
½tsp baking powder

For the filling:

200ml (7oz) whipping cream, whipped to soft peaks
150g pot Greek yogurt
410g can apricots, drained and diced
2tbsp icing sugar, plus
