EASTER FEAST!

SLOW-ROAST SPICED LAMB

SERVES 6 PREP 20 MINS + MARINATING COOK 4 HOURS 45 MINS

1/3 cup lemon juice, plus 1 lemon extra, chunks
2 tbsp olive oil
2 garlic cloves, crushed
2 tsp dried mint
1 tsp ground cumin
½ tsp mixed spice
2kg lamb leg, bone in
2 cups vegetable stock
2 red onions, wedges
800g small kipfler potatoes, whole
steamed beans, mint leaves, to serve

1 In a bowl, combine juice, oil, garlic, mint and spices. Season well. Massage mixture into lamb. Marinate 2 hours or overnight.

2 Preheat oven to 160°C. Pour stock into base of pan. Scatter over onions. Place lamb on top. Cover with baking paper and foil, roast 3 hours.

Add potatoes to pan. Scatter extra lemon chunks
