Garlic & ginger chicken

Garlic ginger chicken is a simple and homely Chinese dish oozing with fresh aromatic flavours. With its rich, dark sauce it’s great served over rice or noodles.

50 cornflour
250g diced chicken (breast or thigh)
250ml vegetable oil
150g onion, finely chopped
5 garlic cloves, crushed
1 tsp garlic purée
1 tsp ginger purée
50g pickled ginger
