S an avid fish eater, I like to find new ways to cook our catches and I was recently given a copy of “The Whole Fish” by Josh Niland. Josh is the owner of St Peter, a fish restaurant that opened to widespread critical acclaim in 2016. Acclaimed by Jamie Oliver and Nigella Lawson, Josh is an extremely innovative chef and this book explores recipes that are new, innovative and use the whole fish. There are recipes that use the bones, livers, spleens and even the scales. While a lot of people will back away from some of the more unusual recipes, I love exploring new
