Vegan nutrition in focus: salads

une is upon us, and summer is the perfect time to enjoy a variety of salads, both sweet and savoury when we want to keep it light and simple. I know some people struggle ‘enjoying’ salads because they class them as ‘boring’ and ‘too healthy’, however, this is one variety of food that can be both tasty and pleasing to the eye if made properly. What I mean by ‘properly’ is made with a little more time, love, patience and a handful of ingredients you wouldn’t normally consider making a salad with.
