Cooking styles and fashions change with the times, but while those dishes your parents and grandparents used to make might be off trend, they were usually tasty and often comforting. Here we revisit some old-style dishes and reimagine them with healthy ingredients while maintaining the comfort factor. Get into some retro cooking style with our: veggie shepherd’s pie with pea mash; cauliflower mac and cheese; healthy bread and butter pudding; apricot chicken traybake; re-imagined lamb roast; golden dumplings; or Gran’s fruit loaf.

Veggie Shepherd’s Pie with Pea Mash

This lovely vegetarian dish is a healthy alternative to the traditional meat-based shepherd’s pie. Mushrooms contain the antioxidant mineral selenium and some vitamin D, which play a role in strengthening our immune function and protecting us from chronic diseases. Mushrooms also provide iron and B vitamins that will help support healthy energy levels and the production of neurotransmitters such as serotonin.

Serves: 4

1 onion, finely chopped
4 cloves garlic, minced
Olive oil, to sauté
2 carrots, diced
2 celery sticks, finely chopped
200g mushrooms, diced
1 cup vegetable stock
400g tin diced tomatoes
3 tbsp tomato paste
2 tbsp balsamic vinegar
1 tin cooked lentils or ¾ cup cooked lentils
1 tsp ground cumin
Pinch chilli flakes
1 tsp sweet paprika
Handful chopped parsley
Grated cheese, for topping
3 large potatoes, peeled & diced
1¼ cups frozen peas

1. In a large pan over medium heat, sauté onion and garlic in some olive oil.

2. Add carrots, celery and mushrooms and cook for 5 mins.
