This lovely vegetarian dish is a healthy alternative to the traditional meat-based shepherd’s pie. Mushrooms contain the antioxidant mineral selenium and some vitamin D, which play a role in strengthening our immune function and protecting us from chronic diseases. Mushrooms also provide iron and B vitamins that will help support healthy energy levels and the production of neurotransmitters such as serotonin.
Serves: 4
1 onion, finely chopped
4 cloves garlic, minced
Olive oil, to sauté
2 carrots, diced
2 celery sticks, finely chopped
200g mushrooms, diced
1 cup vegetable stock
400g tin diced tomatoes
3 tbsp tomato paste
2 tbsp balsamic vinegar
1 tin cooked lentils or ¾ cup cooked lentils
1 tsp ground cumin
Pinch chilli flakes
1 tsp sweet paprika
Handful chopped parsley
Grated cheese, for topping
3 large potatoes, peeled & diced
1¼ cups frozen peas
