Roasted Cauliflower with Hazelnut Ajo Blanco

1 medium cauliflower (1.5kg)
¼ cup extra-virgin olive oil
2 cloves garlic, crushed
2 tsps smoked paprika
1 tsp ground cumin
200g red grapes, halved
2 shallots, sliced thinly
2 tsps extra-virgin olive oil, extra
2 tsps sherry vinegar
1/3 cup skinless roasted hazelnuts, chopped coarsely
¼ cup fresh oregano leaves

50g crustless sourdough bread, chopped coarsely
1¼ cups skinless roasted hazelnuts
¼ cup extra-virgin olive oil
1 small clove garlic, crushed
