ONE-PAN FAJITA PORK & RICE

SERVES 4 PREP 10 MINS COOK 20 MINS

600g pork sizzle steaks, thinly sliced
40g sachet fajita spice mix
¹/³ cup olive oil
1 chorizo, thinly sliced
1 red capsicum, thinly sliced
1 medium red onion, cut into thin wedges
200g punnet cherry tomatoes, halved
450g microwave brown rice
½ cup frozen peas
1 cup chopped coriander with stems, extra sprigs to serve
1 lime, juiced
Mexican salsa and sour cream, to serve

Combine pork, seasoning and half the oil in a bowl. Heat a large, deep non-stick frying pan over a medium-high heat. Cook pork, in batches, until lightly golden. Remove from pan. Add chorizo to same hot pan. Cook, stirring until golden. Remove from
