CHICKEN SHAWARMA WITH WATERMELON, MINT & FETA SALAD
Serves 4 Takes 35 minutes, plus marinating
INGREDIENTS
• 8 boneless and skinless chicken thighs
• 4 wholemeal pitta breads
For the shawarma paste mix
• Juice and zest of 1 lemon
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 tsp smoked paprika
• 1 tsp ground cumin
• 1 tsp ground coriander
• ½ tsp salt
• A pinch of ground nutmeg
• A pinch of cinnamon
• A pinch of dried chilli flakes
For the watermelon salad
• 350g/12oz watermelon, cubed• 125g/4½oz feta cheese, cubed• 30g/1¼oz red onion, peeled and thinly sliced• ½ cucumber, cut into chunks• A bunch of fresh mint• ½• Juice of 1 lime
