FRAGRANT MEATBALLS WITH HERBY ‘COUSCOUS’
This is a truly special meal – and happens to be quite similar to one I make for my favourite athlete when I do my regular privatecheffing gigs over the Wimbledon Championships every year. I hope you love it as much as my client does: it’s just beautiful!

Serves: 4
■ 500g minced beef, 20 per cent fat
■ 2 tsps ground cumin
■ ½ tsp chilli powder
■ ¼ tsp ground cinnamon
■ ¼ tsp garlic powder
■ Pinch of ground allspice
■ 1 tbsp ghee or lard
For the cauliflower ‘couscous’
■ 55g unsalted butter
■ 550g cauliflower florets, blitzed into ‘rice’
■ ½ tsp dried oregano
■ ½ onion, finely chopped
■ 3 garlic cloves, finely chopped
■ 1 tsp ground cumin
■ Generous handful of flat-leaf parsley leaves, finely chopped
■ Generous handful of fresh coriander leaves, finely chopped
■ Small handful of fresh mint leaves, finely chopped
■ Small handful of fresh dill, finely chopped
■ 1 tomato, finely chopped
■ Juice of ½ lemon
